1 lb of ground turkey
1 can of cannellini beans
15 oz can low sodium chicken or vegetable stock
½ small onion
½ any color bell pepper
Cornstarch or flour
Cumin, oregano, crushed red peppers, S/P
Brown turkey with onions, peppers, garlic and S/P
Add stock and simmer for 15 mins
While waiting mix 1 TB of either flour or cornstarch with 1 TB warm water to make a paste.
Add paste to pot stir and bring to a boil. Reduce heat back to simmer ; add beans and simmer for 15 more minutes.
Finish with chopped cilantro
