1 lb lean pork chops (I like breakfast chops)
4 medium sized sweet potatoes or yams
½ onion sliced
2 oranges, juiced
2 TB brown sugar
Seasonings: Salt, Pepper, oregano, onion/garlic powder, paprika
Wash potatoes and cut off the ends, then cube. Add 1 tsp of oil, S/P and microwave in a covered dish for 5 mins. Set aside.
Season pork chops. Heat 2 TB of oil in a skillet on med-high and cook on both sides for 3-5 mins depending on thickness. Remove pork chops. Add orange juice, brown sugar and quickly bring to boil. Lower heat, add pork chops back and simmer 5 mins flipping once.
Heat 2 TB of oil, add minced garlic, onions, and sweet potatoes saute for 5-8mins until cooked through. Toss several times. Garnish with chopped green onions.
