1 lb medium shrimp
8 oz dry whole wheat pasta
½ small onion chopped
1 cup chicken/veg stock
Seasonings: Salt, Pepper, onion/garlic powder, lemon pepper(optional)
Clean and remove shells from shrimp, season then set aside
Boil pasta for 8 mins, drain return to , add stock, minced garlic, and half of the onions, S/P, and ¼ of the lemon juice simmer for 5 mins.
Heat 2 TB of oil in a skillet on medium-high heat, add minced garlic, onions, shrimp brown on both sides quickly, then add remaining lemon juice cover and continue cooking for 3 mins.
