Chicken w/ Green Beans


1lb whole chicken breasts or tenders

1 lb fresh or frozen green beans

4 oz white mushrooms,sliced

¼ small onion

Minced garlic

¾ cups brown rice

2 cups low sodium chicken or veg stock


Seasonings: S/P, crushed red peppers, onion/garlic powder,italian seasoning


Bring stock to boil; add rice and simmer for 25-30 mins until cooked


In a lightly oiled skillet, saute seasoned chicken flipping once on medium heat, for 8-10 min depending on size and thickness. Set aside


In the same pan, heat 2 tsp of oil, then add minced garlic, onion, green beans and mushrooms season with S/P and crushed red peppers. Stir and cook covered on med-high for about 5 mins until lightly browned. Push vegetables to one side, return chicken to pan, cook for another 3 mins.
